Ingredients:

  • 4 bone-in, skin-on chicken thighs

Instructions:

1. Prepare Marinade:

  • In a bowl, whisk together soy sauce, honey, Dijon mustard, olive oil, minced garlic, oregano, paprika, salt, and pepper.

2. Marinate Chicken:

  • Place the chicken thighs and drumsticks in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 24 hours for optimal flavor.

3. Preheat Oven:

  • Preheat your oven to 375°F (190°C).

4. Transfer to Baking Dish:

  • Remove the marinated chicken from the refrigerator and transfer it to a baking dish, skin side up.

5. Bake:

  • Bake the chicken in the preheated oven for 45 minutes or until the internal temperature reaches 165°F (74°C), basting the chicken with the marinade every 15 minutes.

6. Broil (Optional):

  • If you desire a crispier skin, broil the chicken for an additional 2-3 minutes until the skin is golden brown. Watch closely to prevent burning.

7. Garnish and Serve:

  • Remove the caramelized baked chicken from the oven. Garnish with fresh parsley and sesame seeds if desired. Allow the chicken to rest for a few minutes before serving.
