Ingredients:

For the Dumplings:

  • 1 cup all-purpose flour
  • 1/2 cup water
  • 1/4 teaspoon salt

  • Pinch of black pepper (optional)
  • Cornstarch, for dusting

For the Soup:

  • 6 cups vegetable broth
  • 1 cup sliced carrots
  • 1 cup chopped celery
  • 1 cup diced onions
  • 1 cup sliced mushrooms (such as button or cremini)
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • Chopped fresh parsley, for garnish

Instructions:

  1. In a mixing bowl, combine the all-purpose flour, water, salt, garlic powder, onion powder, and black pepper (if using) to make the dumpling dough. Mix until a smooth dough forms. If the dough is too sticky, add a little more flour; if it’s too dry, add a little more water.
  2. Lightly dust a clean surface with cornstarch. Roll out the dumpling dough into a thin sheet, about 1/8 inch thick.
  3. Use a knife or cookie cutter to cut the dough into small squares or rounds to make the dumplings. Set aside.
  4. In a large pot, heat olive oil over medium heat. Add the diced onions and minced garlic, and sauté until translucent and fragrant.
  5. Add the sliced carrots, chopped celery, and sliced mushrooms to the pot. Cook for a few minutes until the vegetables start to soften.
  6. Pour in the vegetable broth and add the dried thyme and dried oregano. Season with salt and pepper to taste. Bring the soup to a simmer.
  7. Carefully drop the prepared dumplings into the simmering soup one by one, making sure they are evenly distributed.
  8. Cover the pot with a lid and let the soup simmer for about 15-20 minutes, or until the dumplings are cooked through and tender.
  9. Once the dumplings are cooked, taste the soup and adjust the seasoning if needed.
  10. Ladle the vegetarian dumpling soup into serving bowls. Garnish with chopped fresh parsley for a pop of color and flavor.
  11. Serve the warm and comforting vegetarian dumpling soup as a delicious and satisfying meal.
