Shirmp fried rice

Ingredients:

- 2 cups cooked jasmine rice (preferably day-old)
- 1/2 pound (about 225g) medium shrimp, peeled and deveined
- 2 eggs, lightly beaten
- 1 cup mixed vegetables (peas, carrots, corn, and/or diced bell peppers)
- 3 green onions, thinly sliced
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sesame oil
- 2 tablespoons vegetable oil, divided
- Salt and black pepper to taste
- Optional: 1/2 cup diced pineapple or small pineapple chunks (for sweetness)
Instructions:
- Prepare Ingredients:
- Ensure all ingredients are chopped, minced, and ready before starting the cooking process.
- Cook Shrimp:
- In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the shrimp and cook for 2-3 minutes per side or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
- Scramble Eggs:

- In the same skillet, push the cooked shrimp to the side and add the remaining 1 tablespoon of oil. Pour the beaten eggs into the skillet and scramble them. Once cooked, mix the scrambled eggs with the shrimp.

- Cook Vegetables:
- Add the minced garlic and mixed vegetables to the skillet. Stir-fry for 2-3 minutes until the vegetables are tender but still crisp.
- Add Rice:
- Add the cooked jasmine rice to the skillet, breaking up any clumps. Stir-fry the rice with the vegetables and eggs.
- Season with Soy Sauce and Oyster Sauce:
- Pour soy sauce and oyster sauce over the rice mixture. Mix well to ensure the rice is evenly coated with the sauces.
- Add Shrimp and Green Onions:
- Add the cooked shrimp back into the skillet. Toss in the sliced green onions. If using diced pineapple, add it at this stage.
- Drizzle with Sesame Oil:

- Drizzle sesame oil over the fried rice and toss everything together. Season with salt and black pepper to taste. Adjust the seasoning and sauce quantities according to your preference.

- Stir-fry the entire mixture for an additional 2-3 minutes until everything is heated through and well combined.

- Transfer the shrimp fried rice to serving plates or bowls. Garnish with additional sliced green onions if desired.
