Ingredients

12 oz (340g) fettuccine pasta

For the Sauce & Bake

2 tbsp butter

1 tbsp olive oil

3 cloves garlic, minced

1 lb (450g) shrimp, peeled and deveined (medium or large)

2 tbsp all-purpose flour
-
2 cups half-and-half or heavy cream
-
1 cup milk (whole or 2%)

1 cup parmesan cheese, grated

1 ½ cups shredded mozzarella cheese, divided

½ tsp Italian seasoning

¼ tsp red pepper flakes (optional)

Salt and black pepper to taste

¼ cup chopped parsley (for garnish)
Instructions
Step 1: Cook the Fettuccine

Bring a large pot of salted water to a boil.

Add fettuccine and cook until al dente, about 10 minutes (check the package for timing).

Drain and set aside. Toss lightly with olive oil to prevent sticking.
Step 2: Cook the Shrimp

In a large skillet, heat 1 tbsp butter + 1 tbsp olive oil over medium-high heat.

Add the shrimp and cook 1–2 minutes per side until pink and opaque. Remove from skillet and set aside.

Drain any excess liquid, but do not clean the skillet—you’ll use the flavor for the sauce.
Step 3: Make the Cream Sauce

In the same skillet, reduce heat to medium. Add 1 tbsp butter and garlic; sauté 30 seconds until fragrant.

Sprinkle in the flour and whisk for 1 minute to form a roux.

Slowly whisk in the half-and-half and milk, making sure the mixture stays smooth.

Stir in:

1 cup parmesan

1 cup mozzarella

Italian seasoning

Salt, pepper, and red pepper flakes

Simmer 3–5 minutes until the sauce thickens slightly.
Step 4: Combine Everything

Preheat your oven to 375°F (190°C).

In a large bowl or pot, toss the cooked fettuccine with the cream sauce.

Gently fold in the cooked shrimp.

Transfer the mixture to a greased 9×13-inch baking dish.

Top with the remaining ½ cup mozzarella cheese.
Step 5: Bake

Bake uncovered for 20–25 minutes, or until the cheese is melted, golden, and bubbling.

For an extra golden top, broil for 2–3 minutes at the end, watching closely.
Step 6: Garnish and Serve

Remove from oven and let sit for 5–10 minutes to set slightly.

Sprinkle with fresh chopped parsley before serving.
