SOUTHERN POTATO SALAD

Ingredients:

  • 2 pounds (about 4 cups) russet potatoes, peeled and diced into 1/2-inch cubes
  • 4 large eggs
  • 1 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon yellow mustard
  • 1/2 cup sweet pickle relish
  • 1/2 cup celery, finely chopped
  • 1/2 cup red onion, finely chopped
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon sugar
  • Salt and black pepper to taste
  • Paprika for garnish (optional)
  • Fresh parsley, chopped, for garnish (optional)

Instructions:

  1. Cook Potatoes:
    • Place diced potatoes in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil, then reduce heat and simmer for 15-20 minutes or until potatoes are fork-tender but still firm. Drain and let them cool to room temperature.
  2. Hard-Boil Eggs:
    • While the potatoes are cooking, place the eggs in a saucepan and cover them with water. Bring to a boil, then reduce heat to low, cover, and simmer for 10-12 minutes. Transfer eggs to an ice water bath to cool. Once cooled, peel and chop the eggs.
  3. Prepare Dressing:
    • In a large mixing bowl, whisk together mayonnaise, Dijon mustard, yellow mustard, sweet pickle relish, celery, red onion, apple cider vinegar, sugar, salt, and black pepper.
  4. Combine Potatoes and Eggs:
    • Gently fold the cooled diced potatoes and chopped hard-boiled eggs into the dressing, ensuring they are well coated.
  5. Chill:
    • Cover the bowl and refrigerate the potato salad for at least 2 hours to allow the flavors to meld and for the salad to chill.
  6. Adjust Seasoning:
    • Before serving, taste and adjust the seasoning if needed. Add more salt, pepper, or mustard according to your preference.
  7. Garnish and Serve:
    • Transfer the potato salad to a serving dish. If desired, garnish with a sprinkle of paprika and chopped fresh parsley.
  8. Enjoy:
    • Serve this classic Southern potato salad as a side dish at picnics, barbecues, or alongside your favorite main courses. Enjoy the creamy and flavorful goodness!
