SOUTHERN POTATO SALAD

Ingredients:
- 2 pounds (about 4 cups) russet potatoes, peeled and diced into 1/2-inch cubes
- 4 large eggs
- 1 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1 tablespoon yellow mustard
- 1/2 cup sweet pickle relish
- 1/2 cup celery, finely chopped
- 1/2 cup red onion, finely chopped
- 2 tablespoons apple cider vinegar
- 1 teaspoon sugar
- Salt and black pepper to taste
- Paprika for garnish (optional)
- Fresh parsley, chopped, for garnish (optional)
Instructions:
- Cook Potatoes:
- Place diced potatoes in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil, then reduce heat and simmer for 15-20 minutes or until potatoes are fork-tender but still firm. Drain and let them cool to room temperature.
- Hard-Boil Eggs:
- While the potatoes are cooking, place the eggs in a saucepan and cover them with water. Bring to a boil, then reduce heat to low, cover, and simmer for 10-12 minutes. Transfer eggs to an ice water bath to cool. Once cooled, peel and chop the eggs.
- Prepare Dressing:
- In a large mixing bowl, whisk together mayonnaise, Dijon mustard, yellow mustard, sweet pickle relish, celery, red onion, apple cider vinegar, sugar, salt, and black pepper.
- Combine Potatoes and Eggs:
- Gently fold the cooled diced potatoes and chopped hard-boiled eggs into the dressing, ensuring they are well coated.
- Chill:
- Cover the bowl and refrigerate the potato salad for at least 2 hours to allow the flavors to meld and for the salad to chill.

- Before serving, taste and adjust the seasoning if needed. Add more salt, pepper, or mustard according to your preference.
