Ingredients:
For the Base:
1 1/2 cups almond flour
1/4 cup unsweetened cocoa powder
3 tablespoons melted coconut oil
2 tablespoons honey or maple syrup (or sugar-free sweetener)
For the Cream Cheese Layer:
8 oz cream cheese, softened
1/4 cup honey or sugar-free syrup
1 teaspoon vanilla extract
1 cup whipped coconut cream or sugar-free whipped topping
For the Chocolate Layer:
1/4 cup unsweetened cocoa powder
2 cups unsweetened almond milk or milk of choice
1/3 cup honey or sugar-free syrup
2 tablespoons cornstarch or arrowroot powder
1 teaspoon vanilla extract
For the Topping:
1 cup whipped coconut cream or sugar-free whipped topping
1/4 cup shaved dark chocolate (sugar-free or 85%+ cacao)
Instructions:
1. Prepare the Base:
Mix the almond flour, cocoa powder, melted coconut oil, and honey in a bowl until crumbly but moist.
Press the mixture firmly into the bottom of an 8×8-inch square dish. Place in the freezer to set while preparing the other layers.
2. Make the Cream Cheese Layer:
Beat the softened cream cheese with honey and vanilla extract until smooth.
Fold in the whipped coconut cream until fluffy.
Spread this layer evenly over the chilled base. Return to the freezer while preparing the chocolate layer.
3. Make the Chocolate Layer:
In a saucepan, whisk together the cocoa powder, almond milk, honey, and cornstarch over medium heat.
Cook, stirring constantly, until the mixture thickens to a pudding-like consistency (about 5 minutes). Remove from heat and stir in vanilla extract.
Let it cool slightly, then spread it evenly over the cream cheese layer. Chill in the refrigerator for at least 2 hours to set.
4. Add the Final Layer:
Spread the whipped coconut cream evenly over the chocolate layer and sprinkle with shaved dark chocolate for garnish.
