nut and seed energy cookies

Description:
These Nut and Seed Cookies are naturally sweetened with bananas, completely flour-free, and contain no added sugar. They’re a perfect guilt-free snack, energy boost, or breakfast cookie!

Ingredients:
1 cup mixed nuts (almonds, walnuts, cashews, etc.), finely chopped
1/2 cup mixed seeds (pumpkin seeds, sunflower seeds, sesame seeds, chia seeds, etc.)
1/2 cup unsweetened shredded coconut
2 ripe bananas, mashed
2 tablespoons nut butter (almond, peanut, or sunflower seed butter)
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon (optional)
1/4 teaspoon salt
Instructions:
1. Preheat the Oven:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
2. Mix the Ingredients:
In a large mixing bowl, combine the chopped nuts, seeds, shredded coconut, cinnamon, and salt.
In another bowl, mash the bananas until smooth. Add the nut butter and vanilla extract, stirring until well combined.
Pour the wet mixture into the dry ingredients and mix thoroughly.
3. Shape the Cookies:
Scoop 1-2 tablespoons of the mixture for each cookie and shape into rounds. Place them on the prepared baking sheet, spacing them slightly apart.
4. Bake the Cookies:
Bake for 12-15 minutes, or until the cookies are set and slightly golden around the edges.
5. Cool and Serve:
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
