Ingredients

Pasta and Meat

  • 12 oz (340g) medium pasta shells

  • 1 lb (450g) ground beef (lean preferred)

  • 1 tablespoon olive oil (optional, for browning)

Sauce and Flavorings

  • 1 small onion, finely diced

  • 2–3 garlic cloves, minced

  • 1 can (15 oz) crushed tomatoes or tomato sauce

  • 2 tablespoons tomato paste

  • 1 teaspoon dried oregano

  • 1/2 teaspoon dried basil

  • 1/4 teaspoon crushed red pepper flakes (optional)

  • Salt and pepper, to taste

  • 1/2 cup pasta cooking water (reserved)

Optional Additions

  • 1/2 cup shredded mozzarella or Parmesan cheese

  • 1/4 cup chopped fresh parsley or basil

  • 1/2 teaspoon sugar (if sauce tastes too acidic)


Equipment Needed

  • Large pot for boiling pasta

  • Skillet or sauté pan

  • Wooden spoon or spatula

  • Cheese grater (if using fresh cheese)


Instructions

Step 1: Cook the Pasta

Bring a large pot of salted water to a boil. Cook the pasta shells according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set pasta aside.


Step 2: Brown the Ground Beef

In a large skillet over medium-high heat, add olive oil (if needed) and the ground beef. Break it up with a spoon and cook until browned, about 5–7 minutes. Drain excess grease if necessary.


Step 3: Add Aromatics

Reduce heat to medium. Add the chopped onion and sauté for 2–3 minutes until softened. Add garlic and cook for another 30 seconds, stirring frequently.


Step 4: Make the Sauce

Stir in the tomato paste and cook for 1 minute. Add the crushed tomatoes, oregano, basil, red pepper flakes, and a pinch of salt and pepper. Simmer uncovered for 10 minutes, stirring occasionally. Add a splash of reserved pasta water if sauce thickens too much.

Taste and adjust seasoning — add a pinch of sugar if the tomatoes are too acidic.


Step 5: Combine Pasta and Sauce

Add the drained pasta shells to the skillet and toss until evenly coated with sauce and beef. Add a little more pasta water if needed to loosen the sauce and coat everything smoothly.

If you’re using cheese, stir in half and sprinkle the rest on top before serving.


Step 6: Serve and Garnish

Serve hot, garnished with fresh herbs and extra cheese if desired. Pair with crusty bread or a simple salad for a full meal.


Tips for Success

  • Use medium or large shells — they hold the sauce and bits of beef perfectly.

  • Deglaze the pan with a splash of red wine for extra flavor before adding the tomato sauce.

  • Make it cheesy by transferring the skillet to a baking dish, topping with mozzarella, and broiling for 5 minutes.

  • Spicy Beef Shells: Add chopped jalapeño or extra chili flakes for heat.

  • Creamy Version: Stir in 1/4 cup heavy cream or a few tablespoons of cream cheese.
