Instructions

Step 1: Preheat Oven

Step 2: Prepare the Potatoes

Wash and dry the potatoes. Cut them into even halves or quarters depending on their size to ensure even cooking.

Place potatoes in a large mixing bowl. Add the olive oil (or melted butter), minced garlic, salt, pepper, herbs, and paprika if using. Toss until every piece is well coated.

Step 3: Coat with Parmesan

Sprinkle half of the Parmesan cheese into the bowl and toss again to distribute evenly. Reserve the remaining cheese for topping before baking.

Step 4: Arrange and Bake

Spread the potatoes cut-side down on the prepared baking sheet in a single layer. Sprinkle the rest of the Parmesan over the top.

Bake in the preheated oven for 35–40 minutes, or until golden brown and crispy on the edges. Check for doneness by piercing with a fork — they should be tender inside

Step 5: Garnish and Serve

Remove from the oven and let cool for 5 minutes. Transfer to a serving dish and sprinkle with fresh parsley, extra cheese, or a squeeze of lemon juice for brightness.

Serve hot with a side of sour cream, ranch, or garlic aioli if desired
