 Ingredients

 For the Crust:

  • 2 cups graham cracker crumbs (about 14 full sheets)

 For the Cheesecake Filling:

  • 16 oz (2 packages) cream cheese, softened

  • ½ cup sour cream

 Instructions

1. Prepare the Crust

  1. In a medium bowl, mix the graham cracker crumbs, melted butter, sugar, and vanilla until the mixture resembles wet sand.

  2. Line an 8×8-inch pan with parchment paper (with overhang for easy lifting).

  3. Press the crust mixture firmly into the bottom of the pan using the back of a spoon or the bottom of a flat measuring cup.

  4. Place the crust in the freezer while you prepare the cheesecake layer (about 10–15 minutes).

2. Make the Cheesecake Filling

  1. In a large mixing bowl, beat the softened cream cheese with a hand mixer or stand mixer until smooth and fluffy (about 2–3 minutes).

  2. Add sour cream, sugar, vanilla extract, and lemon juice. Beat again until fully incorporated and smooth.

  3. Gently fold in the whipped topping using a spatula, being careful not to deflate the mixture.

3. Make the Strawberry Crunch Topping

  1. In a food processor, pulse the freeze-dried strawberries and Oreos separately into coarse crumbs.

  2. Mix both together in a bowl. Stir in the melted butter until the mixture resembles a moist crumble.

  3. (Optional) Add 1 tbsp of strawberry Jell-O powder for a punch of color and extra strawberry flavor.

  4. Sprinkle generously over the top of the chilled cheesecake layer. Gently press it in with your hands or a spoon to help it adhere.

4. Slice Into Chunks

  1. Once the cheesecake is fully chilled and firm, remove it from the pan using the parchment paper overhang.

  2. Place on a cutting board and slice into 1–1½ inch squares (a sharp knife dipped in hot water helps with clean cuts).

  3. Wipe the knife between cuts for the cleanest presentation.
