Strawberry Crunch Cheesecake Chunks are small, no-bake cheesecake squares layered with a buttery graham cracker crust, rich vanilla cheesecake filling, and a nostalgic strawberry crunch topping. These bite-sized treats are inspired by the strawberry shortcake ice cream bars we loved as kids—only now they’re creamier, richer, and absolutely addicting in chunk form!

 Ingredients

 For the Crust:

  • 2 cups graham cracker crumbs (about 14 full sheets)

  • ½ cup (1 stick) unsalted butter, melted

  • 2 tbsp granulated sugar

  • 1 tsp vanilla extract

 For the Cheesecake Filling:

  • 16 oz (2 packages) cream cheese, softened

  • ½ cup sour cream

  • ⅓ cup granulated sugar

  • 1 tsp vanilla extract

  • 1 tbsp lemon juice

  • 1 cup whipped topping (like Cool Whip) or whipped cream

  •  For the Strawberry Crunch Topping:

  • 1 cup freeze-dried strawberries

  • 1 cup golden Oreos (about 10 cookies)

  • 2 tbsp unsalted butter, melted

  • Optional: 1 tbsp strawberry Jell-O powder (for extra color & flavor)

 Instructions

1. Prepare the Crust

  1. In a medium bowl, mix the graham cracker crumbs, melted butter, sugar, and vanilla until the mixture resembles wet sand.

  2. Line an 8×8-inch pan with parchment paper (with overhang for easy lifting).

  3. Press the crust mixture firmly into the bottom of the pan using the back of a spoon or the bottom of a flat measuring cup.

  4. Place the crust in the freezer while you prepare the cheesecake layer (about 10–15 minutes).

2. Make the Cheesecake Filling

  1. In a large mixing bowl, beat the softened cream cheese with a hand mixer or stand mixer until smooth and fluffy (about 2–3 minutes).

  2. Add sour cream, sugar, vanilla extract, and lemon juice. Beat again until fully incorporated and smooth.

  3. Gently fold in the whipped topping using a spatula, being careful not to deflate the mixture.

  4. Pour the cheesecake filling over the chilled crust and spread evenly with a spatula or offset knife.

  5. Place in the refrigerator for at least 4–6 hours or overnight for best texture.

3. Make the Strawberry Crunch Topping

  1. In a food processor, pulse the freeze-dried strawberries and Oreos separately into coarse crumbs.

  2. Mix both together in a bowl. Stir in the melted butter until the mixture resembles a moist crumble.

  3. (Optional) Add 1 tbsp of strawberry Jell-O powder for a punch of color and extra strawberry flavor.

  4. Sprinkle generously over the top of the chilled cheesecake layer. Gently press it in with your hands or a spoon to help it adhere.

4. Slice Into Chunks

  1. Once the cheesecake is fully chilled and firm, remove it from the pan using the parchment paper overhang.

  2. Place on a cutting board and slice into 1–1½ inch squares (a sharp knife dipped in hot water helps with clean cuts).

  3. Wipe the knife between cuts for the cleanest presentation.

  • Refrigerator: Store in an airtight container in the fridge for up to 5 days.

  • Freezer: You can freeze these chunks for up to 2 months. Flash-freeze pieces on a tray before transferring to a freezer-safe bag.
