Instructions

Step 1: Activate the Yeast

Step 2: Mix the Dough

Add the egg, softened butter, yogurt (if using), and salt.

Gradually add the bread flour one cup at a time while mixing.

Continue until a shaggy dough forms.


Step 3: Knead the Dough

Transfer the dough to a lightly floured surface or knead in a stand mixer using the dough hook.

Knead for 10–12 minutes until the dough is smooth, soft, and elastic.

If the dough feels sticky, add flour one tablespoon at a time, avoiding too much additional flour to keep the bread soft.


Step 4: First Rise

Place the dough into a lightly greased bowl.

Cover with plastic wrap or a clean kitchen towel.

Allow it to rise in a warm place for 1½ hours, or until doubled in size.

Ideal proofing temperature: 75–80°F (24–27°C).


Step 5: Shape the Bread

Punch down the risen dough gently to release excess air.

Shape it into a loaf by rolling it tightly and pinching the seams closed.

Place the dough seam-side down into a greased loaf pan.


Step 6: Second Rise

Cover the loaf loosely.

Allow it to rise for 35–40 minutes, until it has risen about 1 inch above the rim of the pan.


Step 7: Prepare the Egg Wash

Whisk together the egg yolk and milk.

Brush evenly over the top of the loaf.

Sprinkle with sesame, nigella, or poppy seeds if desired.


Step 8: Bake

Preheat the oven to 350°F (175°C).

Bake for 30–35 minutes, or until the loaf is deep golden brown and sounds hollow when tapped on the bottom. An instant-read thermometer inserted into the center should register 190–200°F (88–93°C).

If the top browns too quickly, loosely cover it with aluminum foil during the final 10 minutes of baking.


Step 9: Cool

Remove the bread from the pan immediately after baking.

Place it on a wire rack and cool for at least 30 minutes before slicing.

Cooling helps the crumb set and prevents the bread from becoming gummy.
