Vegetable noodle stir fry

Ingredients:
- 8 ounces (225g) rice noodles or your preferred noodles
- 2 tablespoons sesame oil, divided
- 2 cloves garlic, minced

- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 medium carrot, julienned
- 1 cup broccoli florets
- 1 cup snow peas, trimmed
- 1 cup sliced mushrooms
- 1/4 cup soy sauce
- 2 tablespoons hoisin sauce
- 1 tablespoon rice vinegar
- 1 tablespoon honey or brown sugar
- 2 green onions, thinly sliced (for garnish)
- Sesame seeds (for garnish, optional)
Instructions:
- Prepare Noodles:
- Cook the rice noodles according to the package instructions until al dente. Drain and set aside.
- Preheat Blackstone Griddle:
- Preheat your Blackstone griddle to medium-high heat.
- Sauté Aromatics:
- Heat 1 tablespoon of sesame oil on the griddle. Add the minced garlic and ginger, and sauté for 1-2 minutes until fragrant.
- Add Vegetables:

- Cook for an additional 2-3 minutes, stirring occasionally, until the noodles are heated through and the sauce has thickened slightly.
- Garnish the vegetable noodle stir-fry with thinly sliced green onions and sesame seeds, if desired.
