Weight Watchers Cauliflower Pizza Crust

Weight Watchers Cauliflower Pizza Crust

Preparation Time: 20 minutes Cooking Time: 25 minutes Total Time: 45 minutes Recipe Intensity: Moderate

Ingredients:

For the Cauliflower Crust:

  • 1 medium head cauliflower, washed and dried
  • 1/2 cup reduced-fat shredded mozzarella cheese
  • 2 tablespoons grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs, beaten

For Topping (optional, adjust to your preference):

  • 1/2 cup pizza sauce (low-sodium, if available)
  • 1 cup reduced-fat shredded mozzarella cheese
  • Sliced vegetables (such as bell peppers, onions, mushrooms)
  • Cooked lean protein (such as grilled chicken or turkey pepperoni)
  • Fresh basil leaves, for garnish

Instructions:

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.
  2. Cut the cauliflower into florets and discard the tough core. Place the cauliflower florets in a food processor and pulse until they resemble fine crumbs, resembling rice.
  3. Transfer the cauliflower crumbs to a microwave-safe bowl. Cover the bowl loosely with a lid or microwave-safe plastic wrap. Microwave on high for about 4-5 minutes until the cauliflower is tender. Let it cool slightly.
  4. Place the cooked cauliflower in a clean kitchen towel or cheesecloth. Squeeze out as much moisture as possible. This step is crucial to achieve a firm pizza crust.
  5. In a mixing bowl, combine the squeezed cauliflower, reduced-fat shredded mozzarella cheese, grated Parmesan cheese, dried oregano, garlic powder, salt, black pepper, and beaten eggs. Mix until well combined and forms a dough-like consistency.
  6. Transfer the cauliflower dough onto the prepared baking sheet. Use your hands to press and shape the dough into a round pizza crust, about 1/4-inch thick. Smooth the edges for an even crust.
  7. Bake the cauliflower crust in the preheated oven for about 20-25 minutes, or until golden brown and firm to the touch.
  8. Remove the crust from the oven and let it cool slightly.
  9. Spread the pizza sauce evenly over the cauliflower crust, leaving a small border around the edges.
  10. Sprinkle the reduced-fat shredded mozzarella cheese over the sauce.
  11. Arrange your desired toppings such as sliced vegetables and cooked lean protein over the cheese.
  12. Return the pizza to the oven and bake for an additional 10-12 minutes, or until the cheese is melted and bubbly.
  13. Remove the cauliflower pizza from the oven and let it cool for a few minutes.
  14. Garnish the pizza with fresh basil leaves, if desired.
  15. Slice the Weight Watchers Cauliflower Pizza Crust into wedges and serve hot. Enjoy a delicious and guilt-free pizza that’s low in SmartPoints and packed with flavor!

Note: You can customize the toppings according to your preference and dietary needs. This cauliflower pizza crust is a great alternative for those following a Weight Watchers plan or looking for a low-carb, gluten-free pizza option. Adjust the seasoning and cheese amounts to suit your taste.
