Cooking Time: 40 minutes
Servings: 6-8
Difficulty Level: Intermediate
Ingredients:
- 1 cup wild rice, rinsed
- 8 cups vegetable or chicken broth
- 1/2 cup unsalted butter
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1 pound cremini or white mushrooms, sliced
- 1/2 cup all-purpose flour
- 4 cups milk (whole or 2%)
- 1 cup heavy cream
- 2 teaspoons dried thyme
- Salt and black pepper to taste
- Chopped fresh parsley for garnish
Instructions:
- Cook Wild Rice:
- In a large pot, combine the wild rice and 4 cups of broth. Bring to a boil, then reduce heat, cover, and simmer for 45-50 minutes or until the rice is tender. Drain any excess liquid.
- Prepare Mushroom Base:
- In a separate large pot, melt the butter over medium heat. Add chopped onions and cook until translucent.
- Add Mushrooms and Garlic:
- Add sliced mushrooms and minced garlic to the pot. Cook until the mushrooms release their moisture and become golden brown.
- Make Roux:
- Sprinkle flour over the mushroom mixture and stir well to create a roux. Cook for 2-3 minutes, allowing the flour to cook through.
- Gradually Add Liquids:
- Gradually whisk in the remaining 4 cups of broth, milk, and heavy cream. Stir continuously to avoid lumps.
- Simmer and Season:
- Bring the mixture to a simmer, then add thyme, salt, and black pepper. Simmer for 10-15 minutes, allowing the soup to thicken.
- Combine with Wild Rice:
- Add the cooked wild rice to the soup and stir to combine. Simmer for an additional 10 minutes to allow the flavors to meld.
- Adjust Seasoning:
- Taste and adjust seasoning as needed. Add more salt and pepper if desired.
- Garnish and Serve:
- Ladle the soup into bowls and garnish with chopped fresh parsley.
