Ingredients:
Rice Paper Rolls:
- 8-10 rice paper wrappers
- 1 cup cooked shrimp, sliced in half lengthwise, or cooked chicken breast, thinly sliced (optional)
- 1 large carrot, julienned
- 1 cucumber, julienned
- 1 bell pepper (red, yellow, or orange), julienned
- 1 avocado, thinly sliced
- 1 cup red cabbage, thinly sliced
- 1 cup cooked vermicelli noodles (optional)
- Fresh herbs: mint, basil, cilantro
- 1/4 cup green onions, thinly sliced
- Lettuce leaves, torn into small pieces
Peanut Dipping Sauce:
- 1/4 cup creamy peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1-2 teaspoons sriracha (optional, for heat)
- 1-2 tablespoons water (to thin, as needed)
Instructions:
- Prepare the Ingredients:
- Prepare all your filling ingredients and have them ready. This includes slicing the vegetables, herbs, and protein.
- Cook the vermicelli noodles according to package instructions, then rinse with cold water and drain.
- Make the Peanut Dipping Sauce:
- In a small bowl, whisk together the peanut butter, soy sauce, hoisin sauce, rice vinegar, sesame oil, and sriracha. Add water, a little at a time, until you reach your desired consistency. Set aside.
- Prepare the Rice Paper Wrappers:
- Fill a large shallow dish or pie pan with warm water. Working one at a time, dip a rice paper wrapper into the water for about 10-15 seconds, until it becomes pliable but not too soft. Remove and place it on a clean, damp kitchen towel or cutting board.
- Assemble the Rolls:
- In the center of the rice paper wrapper, place a small amount of each filling ingredient. Start with a piece of lettuce, then add a small handful of vermicelli noodles (if using), followed by the sliced vegetables, herbs, and protein.
- Fold the sides of the wrapper over the filling, then roll it up tightly from the bottom to the top, like a burrito. Repeat with the remaining wrappers and fillings.
- Serve:
- Place the assembled rolls on a serving platter. Serve immediately with the peanut dipping sauce.
