Ingredients:

Rice Paper Rolls:

  • 8-10 rice paper wrappers
  • 1 cup cooked shrimp, sliced in half lengthwise, or cooked chicken breast, thinly sliced (optional)
  • 1 large carrot, julienned
  • 1 cucumber, julienned
  • 1 bell pepper (red, yellow, or orange), julienned
  • 1 avocado, thinly sliced
  • 1 cup red cabbage, thinly sliced
  • 1 cup cooked vermicelli noodles (optional)
  • Fresh herbs: mint, basil, cilantro
  • 1/4 cup green onions, thinly sliced
  • Lettuce leaves, torn into small pieces

Peanut Dipping Sauce:

  • 1/4 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1-2 teaspoons sriracha (optional, for heat)
  • 1-2 tablespoons water (to thin, as needed)

Instructions:

  1. Prepare the Ingredients:
    • Prepare all your filling ingredients and have them ready. This includes slicing the vegetables, herbs, and protein.
    • Cook the vermicelli noodles according to package instructions, then rinse with cold water and drain.
  2. Make the Peanut Dipping Sauce:
    • In a small bowl, whisk together the peanut butter, soy sauce, hoisin sauce, rice vinegar, sesame oil, and sriracha. Add water, a little at a time, until you reach your desired consistency. Set aside.
  3. Prepare the Rice Paper Wrappers:
    • Fill a large shallow dish or pie pan with warm water. Working one at a time, dip a rice paper wrapper into the water for about 10-15 seconds, until it becomes pliable but not too soft. Remove and place it on a clean, damp kitchen towel or cutting board.
  4. Assemble the Rolls:
    • In the center of the rice paper wrapper, place a small amount of each filling ingredient. Start with a piece of lettuce, then add a small handful of vermicelli noodles (if using), followed by the sliced vegetables, herbs, and protein.
    • Fold the sides of the wrapper over the filling, then roll it up tightly from the bottom to the top, like a burrito. Repeat with the remaining wrappers and fillings.
  5. Serve:
    • Place the assembled rolls on a serving platter. Serve immediately with the peanut dipping sauce.

Tips:

  • Rolling: Don’t overfill the rolls to make rolling easier. Practice makes perfect, so don’t worry if the first few are not perfectly rolled.
