Slow Cooker Swiss Steak

Ingredients:

  • 2 pounds round steak, cut into serving-size pieces
  • 1 cup all-purpose flour
  • Salt and black pepper, to taste
  • 2 tablespoons vegetable oil
  • 1 onion, thinly sliced
  • 2 bell peppers, sliced (any color)
  • 2 cloves garlic, minced
  • 1 can (14 ounces) diced tomatoes, undrained
  • 1 cup beef broth
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1/4 cup all-purpose flour (for thickening, optional)
  • Fresh parsley, chopped (for garnish, optional)

Instructions:

  1. Prepare Round Steak:
    • In a shallow dish, combine 1 cup of flour, salt, and black pepper. Dredge each piece of round steak in the flour mixture, ensuring it’s well-coated.
  2. Brown the Steak:
    • In a large skillet, heat vegetable oil over medium-high heat. Brown the round steak pieces on both sides. Work in batches to avoid overcrowding the pan. Transfer the browned steak to the slow cooker.
  3. Sauté Vegetables:
    • In the same skillet, sauté sliced onions, bell peppers, and minced garlic until they are softened. Transfer the sautéed vegetables to the slow cooker.
  4. Combine Ingredients:
    • Add diced tomatoes (with their juice), beef broth, Worcestershire sauce, thyme, oregano, and paprika to the slow cooker. Stir to combine all the ingredients.
  5. Cook in Slow Cooker:
    • Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until the steak is tender.
  6. Optional Thickening:
    • If you prefer a thicker sauce, mix 1/4 cup of flour with a small amount of water to create a smooth paste. Stir the paste into the slow cooker during the last hour of cooking.
  7. Check for Seasoning:
    • Adjust salt and pepper to taste.
  8. Serve:
    • Serve the Swiss steak over mashed potatoes, rice, or noodles. Garnish with chopped fresh parsley if desired.
