Ingredients
- 12 large eggs
- 1/2 cup unsalted butter, melted
- 1/4 cup beef tallow or lard, melted (optional for extra richness)
- 1 cup unflavored pork rinds, finely ground
- 1/4 cup beef protein isolate or whey protein isolate
- 1 teaspoon baking powder
- 1/2 teaspoon salt
Instructions
- Preheat the Oven:
- Preheat your oven to 350°F (175°C).
- Grease a loaf pan (8×4 inch) with butter or line it with parchment paper.
- Prepare the Dry Ingredients:
- In a large bowl, combine the finely ground pork rinds, beef protein isolate, baking powder, and salt. Mix well.
- Prepare the Wet Ingredients:
- In a separate bowl, beat the eggs until they are well combined and slightly frothy.
- Slowly add the melted butter (and beef tallow or lard, if using) to the eggs, mixing continuously.
- Combine Wet and Dry Ingredients:
- Gradually add the dry ingredients to the wet ingredients, mixing until fully incorporated. The batter will be thick.
- Pour into Loaf Pan:
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
- Bake:
- Bake in the preheated oven for 25-30 minutes, or until the bread is golden brown on top and a toothpick inserted into the center comes out clean.
- Cool and Serve:
- Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
- Slice and serve with additional butter, if desired.
Tips
- Storage: Store the bread in an airtight container in the refrigerator for up to 5 days. You can also freeze the slices for longer storage.
- Reheating: Toast the slices lightly in a toaster or oven before serving to restore some of the fresh-baked texture.
- Variations: Add herbs, spices, or grated cheese to the batter for additional flavor variations.
Enjoy your carnivore-friendly bread with a generous spread of butter!
