 Ingredients

 Filling:

  • 1 medium zucchini, thinly sliced or julienned

  • ¾ cup low-fat cottage cheese

  • 1 small carrot, grated or julienned

  • 2 tbsp chopped fresh parsley or cilantro

  • 1 tsp lemon juice or rice vinegar

  • Salt & pepper to taste

  • Optional: ½ tsp garlic powder or a dash of chili flakes

 For the Wrapping:

  • 6–8 sheets of rice paper wrappers

  • Olive oil spray (or brush with olive or avocado oil)

 Optional Dipping Sauce:

  • 2 tbsp soy sauce

  • 1 tbsp rice vinegar

  • 1 tsp sesame oil

  • ½ tsp honey or maple syrup

  • Pinch of chili flakes or fresh chopped chili

 Equipment

  • Large shallow bowl or plate (for softening rice paper)

  • Clean surface or damp towel to roll

  • Tongs or spatula

 Instructions

 Step 1: Prep the Filling

  1. Julienne or thinly slice zucchini and carrot.

  2. In a bowl, mix:

    • Cottage cheese

    • Zucchini

    • Carrot

    • Parsley/cilantro

    • Lemon juice

    • Salt, pepper, and optional seasonings

  3. Stir gently to combine. Set aside.

 Step 2: Soften Rice Paper Wrappers

  1. Fill a shallow dish or large plate with warm water.

  2. Dip one rice paper sheet in water for about 10 seconds until soft but still slightly firm.

  3. Lay the softened sheet flat on a damp towel or board.

 Step 3: Roll the Spring Rolls

  1. Spoon 2–3 tablespoons of the filling onto the bottom third of the rice paper.

  2. Fold the bottom over the filling, tuck in the sides, and roll tightly like a burrito.

  3. Repeat with remaining wrappers and filling.

Don’t overfill — cottage cheese has moisture and can make the roll burst during air frying.

 Step 4: Air Fry

  1. Preheat air fryer to 375°F (190°C) for 2–3 minutes.

  2. Lightly spray each roll with olive oil on all sides.

  3. Place rolls in a single layer in the air fryer basket (leave space between them).

  4. Air fry for 10–12 minutes, flipping halfway through, until golden and crispy.

Optional: Brush a little extra oil on after flipping for even browning.
