 For the Glaze:

  • 1–2 tbsp milk or heavy cream

  • ½ tsp vanilla extract

 Instructions

Step 1: Make the Dough

  1. Activate Yeast: In a small bowl, combine warm milk and 1 tsp sugar. Sprinkle yeast over the top and let sit for 5–10 minutes until foamy.

  2. Mix Dough: In a large bowl (or stand mixer), combine flour, sugar, and salt. Add the yeast mixture, melted butter, and egg. Mix until a dough begins to form.

  3. Knead: Knead by hand for 8–10 minutes (or 5 minutes in a stand mixer with dough hook) until smooth and elastic. If sticky, add flour 1 tbsp at a time.

  4. First Rise: Place dough in a lightly oiled bowl, cover with a damp cloth or plastic wrap, and let rise in a warm place for 1–1.5 hours, or until doubled in size.

Step 2: Prepare Apple Filling

  1. In a skillet over medium heat, melt butter.

  2. Add diced apples, brown sugar, cinnamon, nutmeg, and vanilla. Stir well.

  3. Cook for 5–7 minutes until apples are soft and juices are syrupy. Optional: stir in cornstarch to thicken if too watery.

  4. Remove from heat and let cool.

Step 3: Prepare Crumb Topping

  1. In a small bowl, mix brown sugar, flour, and cinnamon.

  2. Cut in cold butter using a fork or pastry cutter until mixture resembles coarse crumbs.

  3. Chill in refrigerator until ready to use.

Step 4: Roll and Fill

  1. Punch down the risen dough and turn it onto a floured surface.

  2. Roll into a 14×18 inch rectangle, about ¼ inch thick.

  3. Spread softened butter over the surface.

  4. Sprinkle with cinnamon sugar mixture.

  5. Evenly distribute cooled apple filling over the top.

Step 5: Roll and Slice

  1. Roll the dough tightly from the long side into a log.

  2. Slice into 12 even pieces (use dental floss or a sharp knife).

  3. Place rolls in a greased 9×13 inch baking dish.

  4. Cover with a towel and let rise for another 30–45 minutes.

Step 6: Add Crumb & Bake

  1. Preheat oven to 350°F (175°C).

  2. Sprinkle crumb topping generously over the rolls.

  3. Bake for 25–30 minutes, or until golden brown and cooked through. (Check center roll for doneness.)

  4. Remove from oven and let cool for 10–15 minutes before glazing.

Step 7: Glaze and Serve

  1. In a small bowl, whisk together powdered sugar, milk, and vanilla until smooth.

  2. Drizzle glaze over warm rolls.

  3. Serve immediately or store covered at room temperature for up to 2 days.

 Tips for Success

  • Use the right apples: Tart apples like Granny Smith balance the sweetness and hold their shape during baking.

  • Don’t rush the rise: Letting the dough rise fully gives you fluffy rolls.

  • Chill the crumb topping: Keeping the butter cold helps create a crunchy crumble top.

  • Even slices: Use unscented dental floss to cut perfect, round rolls without squishing them.

 Variations & Substitutions

  • Add nuts: Mix chopped pecans or walnuts into the apple filling for extra crunch.

  • Caramel drizzle: Replace the vanilla glaze with caramel sauce for a richer finish.

  • Overnight rolls: After assembling, cover and refrigerate overnight. Let come to room temp for 30 mins before baking in the morning.

  • Vegan option: Use dairy-free butter and milk, and replace the egg with a flax egg.

 Storage & Reheating

  • Store: In an airtight container at room temperature for 2 days, or refrigerate up to 5 days.

  • Freeze: Freeze unglazed rolls individually. Thaw overnight and warm before glazing.

  • Reheat: Microwave for 15–20 seconds for soft, gooey rolls anytime
