Baking Time: 35-40 minutes
Serves: 4

Ingredients:

For the Marinade:

  • 1.5 lbs (about 700g) bone-in, skin-on chicken thighs
  • 3 tablespoons olive oil
  • 3 tablespoons lemon juice
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and black pepper to taste

For Garnish (Optional):

  • Fresh parsley, chopped
  • Lemon wedges

Instructions:

Preheat the Oven:

  1. Preheat your oven to 400°F (200°C).

Marinate the Chicken:

  1. In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, thyme, paprika, salt, and black pepper.
  2. Place the chicken thighs in a zip-top bag or shallow dish and pour the marinade over them.
  3. Massage the marinade into the chicken, ensuring it is well-coated. Allow the chicken to marinate for at least 30 minutes, up to 2 hours in the refrigerator.

Arrange Chicken in Baking Dish:

  1. Place the marinated chicken thighs in a baking dish, skin-side up.

Bake:

  1. Bake in the preheated oven for 35-40 minutes or until the chicken reaches an internal temperature of 165°F (74°C) and the skin is crispy.

Garnish:

  1. Remove the chicken from the oven and let it rest for a few minutes.
  2. Garnish with chopped fresh parsley and lemon wedges.

Serve:

  1. Serve the baked lemon garlic chicken thighs hot, either on their own or with your favorite side dishes.

Note: Adjust the cooking time based on the size of the chicken thighs and your oven’s characteristics.
