Best Italian Meatloaf

Ingredients:

For the Meatloaf:

  • 1 1/2 pounds ground beef (85% lean)
  • 1/2 pound ground pork
  • 1 cup fresh breadcrumbs
  • 1/2 cup whole milk
  • 2 large eggs, beaten
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste
  • 1 cup shredded mozzarella cheese

For the Glaze:

  • 1 cup marinara sauce
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons brown sugar

Instructions:

Preparing the Meatloaf:

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Soak Breadcrumbs: In a small bowl, soak the breadcrumbs in the milk and set aside.
  3. Combine Ingredients: In a large mixing bowl, combine ground beef, ground pork, soaked breadcrumbs, beaten eggs, grated Parmesan cheese, chopped parsley, minced garlic, dried oregano, dried basil, dried thyme, salt, and black pepper. Mix until well combined.
  4. Add Mozzarella Cheese: Gently fold in the shredded mozzarella cheese, ensuring it’s evenly distributed throughout the meat mixture.
  5. Shape Meatloaf: Form the mixture into a loaf shape and place it in a greased baking dish or on a lined baking sheet.

Making the Glaze:

  1. Prepare Glaze: In a small saucepan, combine marinara sauce, balsamic vinegar, and brown sugar. Heat over medium heat, stirring occasionally, until the sugar is dissolved and the glaze thickens slightly.
  2. Glaze Meatloaf: Brush the glaze over the top and sides of the meatloaf, reserving some for serving.

Baking:

  1. Bake: Bake in the preheated oven for 50-60 minutes or until the internal temperature reaches 160°F (71°C).
  2. Rest and Serve: Allow the meatloaf to rest for 10 minutes before slicing. Serve slices with additional glaze on the side.

  1. Garnish: Garnish with additional chopped parsley if desired.
