BEST POTATO PANCAKES EVER

Cooking Time: 15 minutes
Serves: 4-6

Ingredients:

  • 4 large russet potatoes, peeled
  • 1 medium onion, peeled
  • 2 large eggs, beaten
  • 1/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper, or to taste
  • Vegetable oil, for frying
  • Sour cream, applesauce, or your favorite topping for serving

Instructions:

Grate the Potatoes and Onion:

  1. Using a box grater or a food processor with a grating attachment, grate the peeled potatoes and onion.
  2. Place the grated potatoes and onion in a clean kitchen towel and squeeze out excess moisture.

 Prepare the Batter:

  1. In a large bowl, combine the grated potatoes and onion with beaten eggs.
  2. Add flour, baking powder, salt, and black pepper. Mix well to form a batter.

 Heat the Oil:

  1. In a large skillet, heat vegetable oil over medium-high heat until hot but not smoking.

 Fry the Potato Pancakes:

  1. Spoon the potato batter into the hot oil, forming pancakes of your desired size.
  2. Flatten each pancake with a spatula and cook until golden brown on both sides, about 3-4 minutes per side.
  3. Adjust the heat as needed to ensure even cooking without burning.

Drain and Serve:

  1. Place the cooked potato pancakes on a paper towel-lined plate to drain excess oil.
  2. Repeat the process until all the batter is used.

Serve:

  1. Serve the potato pancakes hot.
  2. Top with sour cream, applesauce, or your favorite topping.
