Ingredients:
For the Meat Mixture:
- 1 pound (450g) ground beef or ground turkey
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 cup water
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels (fresh or frozen)
- 1 cup salsa
For the Cheese Layer:
- 2 cups shredded Mexican blend cheese
- 1 cup sour cream
For the Assembly:
- 12 lasagna noodles, cooked according to package instructions
- 1 can (15 oz) diced tomatoes, drained
- 1 cup sliced black olives
- 1 cup chopped fresh cilantro
- 1 cup shredded lettuce
- Additional salsa for serving
Instructions:
Preparing the Meat Mixture:
- Cook Ground Meat: In a large skillet, cook the ground beef or turkey over medium heat until browned. Drain excess fat.
- Add Aromatics: Add chopped onion and minced garlic to the skillet. Cook for 2-3 minutes until the onion is softened.
- Season and Add Ingredients: Stir in taco seasoning and water. Add black beans, corn, and salsa. Simmer for 5-7 minutes until the mixture thickens slightly.
