BEST TACO LASAGNA EVER

Ingredients:

For the Meat Mixture:

  • 1 pound (450g) ground beef or ground turkey
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 cup water
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh or frozen)
  • 1 cup salsa

For the Cheese Layer:

  • 2 cups shredded Mexican blend cheese
  • 1 cup sour cream

For the Assembly:

  • 12 lasagna noodles, cooked according to package instructions
  • 1 can (15 oz) diced tomatoes, drained
  • 1 cup sliced black olives
  • 1 cup chopped fresh cilantro
  • 1 cup shredded lettuce
  • Additional salsa for serving

Instructions:

Preparing the Meat Mixture:

  1. Cook Ground Meat: In a large skillet, cook the ground beef or turkey over medium heat until browned. Drain excess fat.
  2. Add Aromatics: Add chopped onion and minced garlic to the skillet. Cook for 2-3 minutes until the onion is softened.
  3. Season and Add Ingredients: Stir in taco seasoning and water. Add black beans, corn, and salsa. Simmer for 5-7 minutes until the mixture thickens slightly.

Assembling the Layers:

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Prepare Lasagna Noodles: Cook the lasagna noodles according to the package instructions. Drain and set aside.
  3. Create Cheese Layer: In a bowl, mix shredded Mexican blend cheese with sour cream until well combined.
  4. Layering the Lasagna:
    • In a greased 9×13-inch baking dish, layer 4 lasagna noodles at the bottom.
    • Spread half of the meat mixture over the noodles.
    • Sprinkle half of the diced tomatoes and sliced black olives over the meat.
    • Add half of the cheese-sour cream mixture.
    • Repeat the layers with the remaining noodles, meat mixture, tomatoes, olives, and cheese-sour cream mixture.

Baking:

  1. Cover and Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  2. Uncover and Bake: Remove the foil and bake for an additional 5 minutes or until the cheese is melted and bubbly.

Serving:

  1. Rest and Garnish: Let the taco lasagna rest for a few minutes before slicing. Garnish with chopped fresh cilantro and shredded lettuce.
  2. Serve with Salsa: Serve slices with additional salsa on the side.
