  • 1/4 cup (50g) granulated sugar
  • 2 1/4 teaspoons (1 packet) active dry yeast
  • 1/2 cup (120ml) sourdough discard (unfed)
  • 1/4 cup (60g) unsalted butter, melted
  • 1 large egg
  • 3 cups (360g) all-purpose flour
  • 1/2 teaspoon salt

Filling:

  • 1/4 cup (60g) unsalted butter, softened
  • 1/2 cup (100g) granulated sugar
  • Zest of 1 lemon
  • 1 cup (150g) fresh or frozen raspberries (if using frozen, do not thaw)

Lemon Glaze:

  • 1 cup (120g) powdered sugar
  • 2 tablespoons fresh lemon juice
  • Zest of 1 lemon (optional)

Instructions:

  1. Prepare the Dough:
    • In a small bowl, mix the warm milk and granulated sugar. Sprinkle the yeast on top and let it sit for about 5 minutes, until it becomes foamy.
