 Ingredients

 Brownie Base:

  • 115g (1/2 cup) unsalted butter

  • 170g (6 oz) semi-sweet chocolate, chopped

  • 150g (3/4 cup) granulated sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • 65g (1/2 cup) all-purpose flour

  • 1/4 tsp salt

 Cheesecake Layer:

  • 680g (24 oz) cream cheese, room temperature

  • 200g (1 cup) granulated sugar

  • 3 large eggs

  • 1 tsp vanilla extract

  • 120ml (1/2 cup) sour cream

 Caramel Topping:

  • 200g (1 cup) granulated sugar

  • 60ml (1/4 cup) water

  • 120ml (1/2 cup) heavy cream, warm

  • 30g (2 tbsp) unsalted butter

  • Pinch of sea salt (optional, for salted caramel)

 Step-by-Step Instructions

Step 1: Prepare the Brownie Base

  1. Preheat oven to 175°C (350°F). Line the bottom of your springform pan with parchment paper.

  2. In a saucepan over low heat, melt the butter and chocolate, stirring until smooth. Remove from heat.

  3. Stir in the sugar, followed by the eggs one at a time. Mix in vanilla.

  4. Fold in flour and salt until just combined.

Step 2: Make the Cheesecake Filling

Step 3: Bake the Cheesecake

  1. Wrap the bottom of the springform pan with foil and place it in a larger pan. Add hot water to create a water bath (to prevent cracking).

  2. Bake for 50–60 minutes, or until the center is just slightly jiggly.

  3. Turn off the oven, leave the door slightly open, and let the cheesecake cool for 1 hour inside.

  4. Remove from oven, cool completely at room temperature, then refrigerate for at least 6 hours, preferably overnight.

Step 4: Make the Caramel Sauce

  1. In a saucepan, combine sugar and water over medium heat. Stir just until dissolved, then stop stirring.

  2. Let it cook until it turns a deep amber color (watch carefully—this takes 8–10 minutes).

  3. Remove from heat and slowly whisk in warm cream (be careful—it will bubble up).

  4. Add butter and stir until smooth. Add a pinch of sea salt if desired.

  5. Let caramel cool slightly before pouring over the chilled cheesecake.

Step 5: Decorate and Serve

  1. Pour cooled caramel over the cheesecake and spread evenly with an offset spatula.

  2. Optional: Chop leftover brownies or chocolate chunks and sprinkle on top.

  3. Chill for 30 minutes to set the caramel before slicing.
