Preparation Time: 20 minutes Cooking Time: 40 minutes Total Time: 1 hour Recipe Yield: 8 servings Difficulty Level: Intermediate

Ingredients:

For the Chicken Alfredo Sauce:

  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 2 cups cooked chicken, shredded or diced

For the Lasagna Layers:

  • 1 large zucchini, thinly sliced lengthwise
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh basil leaves for garnish (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish with non-stick cooking spray.
  2. In a saucepan, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Pour in the heavy cream and bring it to a simmer. Reduce the heat to low and stir in the grated Parmesan cheese until it melts and the sauce thickens. Season with salt and pepper to taste.
  4. Add the cooked chicken to the Alfredo sauce, stirring until well combined. Remove the saucepan from heat and set aside.
  5. Arrange a layer of thinly sliced zucchini on the bottom of the prepared baking dish, covering it evenly.
  6. Spread a portion of the chicken Alfredo sauce over the zucchini layer, covering it with a generous amount.
  7. Sprinkle some shredded mozzarella cheese over the sauce layer, followed by a sprinkle of grated Parmesan cheese.
  8. Repeat the layers with the remaining zucchini slices, chicken Alfredo sauce, and cheeses, ending with a layer of sauce and cheeses on top.
  9. Cover the baking dish with foil and bake in the preheated oven for about 25-30 minutes, or until the cheese is melted and bubbly.
  10. Remove the foil and broil the lasagna for an additional 5-7 minutes or until the cheese is golden brown and bubbly.
  11. Remove the lasagna from the oven and let it cool slightly before slicing.
  12. Garnish with fresh basil leaves if desired, and serve hot as a delicious low-carb alternative to traditional lasagna.
