Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 4 slices mozzarella cheese
  • 4 slices ripe tomato
  • 1/4 cup fresh basil leaves
  • Balsamic glaze (store-bought or homemade)

Instructions:

  1. Preheat your oven to 400°F (200°C). Lightly grease a baking dish with olive oil or cooking spray.
  2. Season both sides of the chicken breasts with salt and pepper according to your taste preferences.
  3. Heat olive oil in a large skillet over medium-high heat. Once the oil is hot, add the chicken breasts and cook for about 3-4 minutes per side, or until they are golden brown.
  4. Transfer the partially cooked chicken breasts to the prepared baking dish.
  5. Top each chicken breast with a slice of mozzarella cheese, followed by a slice of tomato, and a few fresh basil leaves.
  6. Drizzle some balsamic glaze over the top of each chicken breast, using as much or as little as you like.
  7. Bake the chicken in the preheated oven for about 15-20 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
  8. Once done, remove the chicken from the oven and let it rest for a few minutes before serving.
  9. Garnish with additional fresh basil leaves if desired, and serve hot with your favorite side dishes like steamed vegetables, rice, or salad.
