Carnivore Bread with Butter

Ingredients

  • 12 large eggs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup beef tallow or lard, melted (optional for extra richness)
  • 1 cup unflavored pork rinds, finely ground
  • 1/4 cup beef protein isolate or whey protein isolate
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C).
    • Grease a loaf pan (8×4 inch) with butter or line it with parchment paper.
  2. Prepare the Dry Ingredients:
    • In a large bowl, combine the finely ground pork rinds, beef protein isolate, baking powder, and salt. Mix well.
  3. Prepare the Wet Ingredients:
    • In a separate bowl, beat the eggs until they are well combined and slightly frothy.
    • Slowly add the melted butter (and beef tallow or lard, if using) to the eggs, mixing continuously.
  4. Combine Wet and Dry Ingredients:
    • Gradually add the dry ingredients to the wet ingredients, mixing until fully incorporated. The batter will be thick.
  5. Pour into Loaf Pan:
    • Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  6. Bake:
    • Bake in the preheated oven for 25-30 minutes, or until the bread is golden brown on top and a toothpick inserted into the center comes out clean.
  7. Cool and Serve:
    • Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
    • Slice and serve with additional butter, if desired.

  • Storage: Store the bread in an airtight container in the refrigerator for up to 5 days. You can also freeze the slices for longer storage.
  • Reheating: Toast the slices lightly in a toaster or oven before serving to restore some of the fresh-baked texture.
