Carnivore Mayonnaise

Instructions:

  1. Prepare the Ingredients:
    • Separate the egg yolks from the whites (you can save the whites for another use).

    • In a mixing bowl, whisk the egg yolks until they are smooth and slightly thickened.
  2. Add the Vinegar or Lemon Juice (Optional):
    • If using, add the vinegar or lemon juice to the yolks and whisk until combined. This helps to stabilize the emulsion.
  3. Slowly Add the Fat:
    • Slowly start adding the melted beef tallow to the egg yolks, beginning with just a few drops at a time. Whisk continuously until the yolks start to thicken.
    • Once the mixture begins to thicken and emulsify, you can add the tallow more quickly, in a slow, steady stream, while continuing to whisk constantly.
  4. Season and Finish:
    • Once all the fat is incorporated and the mayonnaise is thick and creamy, whisk in the salt and optional mustard powder for flavor.
  5. Taste and Adjust:
    • Taste the mayonnaise and adjust the seasoning if necessary. You can add more salt or a bit more vinegar/lemon juice if you like a tangier flavor.

Storing the Mayonnaise:

  1. Transfer to a Jar:
    • Transfer the mayonnaise to a clean jar or airtight container.
    • Store in the refrigerator for up to 1 week.
