Carnivore meatloaf

Ingredients:

  • 2 lbs ground beef (preferably grass-fed)
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1/2 cup finely chopped onion
  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/4 cup sugar-free ketchup or tomato sauce (optional, for topping)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C). Lightly grease a baking dish or loaf pan with cooking spray or oil.
  2. Mix the Ingredients:
    • In a large mixing bowl, combine the ground beef, grated Parmesan cheese, eggs, chopped onion, minced garlic, chopped parsley, salt, black pepper, dried oregano, and dried thyme. Use your hands or a spoon to mix until well combined.
  3. Shape the Meatloaf:
    • Transfer the meat mixture to the prepared baking dish or loaf pan.
    • Shape the mixture into a loaf shape, ensuring it’s evenly packed and smoothed out on top.
  4. Bake the Meatloaf:
    • Place the meatloaf in the preheated oven and bake for 45-55 minutes, or until the internal temperature reaches 160°F (71°C) when tested with a meat thermometer.
  5. Optional Topping:
    • If desired, spread sugar-free ketchup or tomato sauce over the top of the meatloaf during the last 10 minutes of baking.
  6. Rest and Serve:
    • Once cooked, remove the meatloaf from the oven and let it rest for 5-10 minutes before slicing.
    • Slice the meatloaf into thick slices and serve hot.
  7. Enjoy:
