Carnivore meatloaf

Ingredients:
- 2 lbs ground beef (preferably grass-fed)
- 1/2 cup grated Parmesan cheese
- 2 large eggs
- 1/2 cup finely chopped onion
- 1/4 cup chopped fresh parsley
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1/4 cup sugar-free ketchup or tomato sauce (optional, for topping)
Instructions:
- Preheat the Oven:
- Preheat your oven to 375°F (190°C). Lightly grease a baking dish or loaf pan with cooking spray or oil.
- Mix the Ingredients:
- In a large mixing bowl, combine the ground beef, grated Parmesan cheese, eggs, chopped onion, minced garlic, chopped parsley, salt, black pepper, dried oregano, and dried thyme. Use your hands or a spoon to mix until well combined.
- Shape the Meatloaf:
- Transfer the meat mixture to the prepared baking dish or loaf pan.
- Shape the mixture into a loaf shape, ensuring it’s evenly packed and smoothed out on top.
- Bake the Meatloaf:
- Place the meatloaf in the preheated oven and bake for 45-55 minutes, or until the internal temperature reaches 160°F (71°C) when tested with a meat thermometer.
- Optional Topping:
- If desired, spread sugar-free ketchup or tomato sauce over the top of the meatloaf during the last 10 minutes of baking.
- Rest and Serve:
- Once cooked, remove the meatloaf from the oven and let it rest for 5-10 minutes before slicing.
- Slice the meatloaf into thick slices and serve hot.
