Carnivore Zero-Carb Bread Recipe

Ingredients:

  • 12 large eggs, separated

  • 1/2 cup (115g) beef tallow, melted (or butter or ghee)
  • 1/2 teaspoon salt
  • 1 teaspoon cream of tartar (optional, helps with whipping egg whites)

Instructions:

  1. Prepare the Ingredients:
    • Preheat your oven to 325°F (165°C). Line a loaf pan with parchment paper or grease it with beef tallow or butter.
    • Separate the egg whites from the yolks and place them in two different bowls.
  2. Whip the Egg Whites:
    • Using an electric mixer or stand mixer, whip the egg whites until stiff peaks form. Adding cream of tartar helps stabilize the egg whites, but it’s optional.
  3. Mix the Yolks and Dry Ingredients:
    • In another bowl, whisk the egg yolks and melted beef tallow (or butter) until well combined.
    • Add the finely ground pork rinds and salt to the yolk mixture, stirring until you get a thick paste-like texture.
  4. Fold in the Egg Whites:
    • Gently fold the whipped egg whites into the yolk mixture. Do this in batches, making sure to incorporate the whites without deflating them too much. This helps keep the bread light and airy.
  5. Pour into the Pan:
    • Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  6. Bake the Bread:
    • Bake in the preheated oven for about 40-45 minutes, or until the bread is golden brown and a toothpick inserted into the center comes out clean.
  7. Cool and Serve:
    • Remove the bread from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely before slicing.

Tips:

  • Pork Rinds: Make sure the pork rinds are ground to a fine powder, as this will give the bread the best texture. You can use a food processor or a blender for this.
  • Egg Whites: Whipping the egg whites is key for getting a light, fluffy texture in the bread. Don’t skip this step!
  • Add Flavors: Though it’s optional on a strict carnivore diet, you can add herbs, garlic powder, or even some grated cheese to change the flavor profile.

Storage:

  • Store the bread in an airtight container in the refrigerator for up to 5 days. It can also be frozen for up to 1 month; simply slice and store in a freezer-safe bag.
