Chicken salad sandwich

Recipe: Classic Chicken Salad Sandwich

Serves: 4

Ingredients:

For the Chicken Salad:

  • 2 cups cooked chicken, shredded or diced (rotisserie chicken works well)
  • 1/2 cup celery, finely chopped
  • 1/4 cup red onion, finely chopped
  • 1/4 cup mayonnaise
  • 2 tablespoons Greek yogurt or sour cream
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped (optional)

For the Sandwich:

  • 8 slices of your favorite bread
  • Lettuce leaves
  • Tomato slices

Instructions:

 Prepare the Chicken Salad:

  1. In a large bowl, combine the cooked chicken, chopped celery, and red onion.
  2. In a separate small bowl, mix together mayonnaise, Greek yogurt or sour cream, Dijon mustard, lemon juice, salt, and pepper.
  3. Pour the dressing over the chicken mixture and toss until well combined.
  4. Add chopped fresh parsley if desired for added flavor.

 Assemble the Sandwiches:

  1. Toast the bread slices lightly if preferred.
  2. Place a generous portion of the chicken salad on one slice of bread.
  3. Top with lettuce leaves and tomato slices.
  4. Cover with another slice of bread to form the sandwich.

 Serve:

  1. Cut the sandwiches diagonally and serve immediately.
  2. Enjoy your delicious and classic Chicken Salad Sandwich!

Note: Customize the chicken salad with additional ingredients like chopped nuts, grapes, or dried cranberries for added texture and sweetness.
