Ingredients
- 4 bone-in, skin-on chicken thighs
- 1/2 pound Italian sausage, cut into 1-inch pieces
- 1 tablespoon olive oil
- 1 large red bell pepper, sliced
- 1 large yellow bell pepper, sliced
- 1 medium red onion, sliced
- 4 cloves garlic, minced
- 1/2 cup dry white wine
- 1/2 cup chicken broth
- 1/4 cup white wine vinegar
- 1/4 cup pickled cherry peppers, sliced (or more to taste)
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the Oven:
- Preheat your oven to 375°F (190°C).
- Prepare the Chicken:
- Season the chicken thighs with salt and pepper on both sides.
- Heat the olive oil in a large ovenproof skillet over medium-high heat.
- Add the chicken thighs, skin-side down, and cook until the skin is golden brown and crispy, about 5-7 minutes. Flip and cook for another 3-4 minutes. Remove the chicken and set aside.
- Cook the Sausage:
- In the same skillet, add the sausage pieces and cook until browned on all sides, about 5 minutes. Remove the sausage and set aside.
- Sauté the Vegetables:
- Add the sliced bell peppers and red onion to the skillet. Cook until they begin to soften, about 5 minutes.
- Add the minced garlic and cook for another 1-2 minutes until fragrant.
- Deglaze the Pan:
- Pour in the white wine and scrape up any browned bits from the bottom of the skillet.
- Let the wine simmer for about 2 minutes.
- Combine Ingredients:
- Add the chicken broth, white wine vinegar, pickled cherry peppers, oregano, and thyme to the skillet.
- Return the chicken thighs and sausage to the skillet, nestling them among the vegetables.
- Bake the Dish:
- Transfer the skillet to the preheated oven.
- Bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Serve:
- Remove the skillet from the oven and let it rest for a few minutes.
- Garnish with freshly chopped parsley before serving.
Tips
- Chicken: You can use boneless, skinless chicken thighs or breasts if preferred, but adjust the cooking time accordingly.
- Sausage: Hot Italian sausage adds a nice kick, but you can use sweet Italian sausage if you prefer a milder flavor.
- Cherry Peppers: Adjust the amount of pickled cherry peppers to your taste for more or less heat.
