Instructions
Step 1: Sear the Chicken

In a large pot or Dutch oven, heat olive oil over medium-high heat.

Season chicken pieces with salt and pepper.

Sear the chicken in batches for 4–5 minutes until lightly browned. Remove and set aside.
Step 2: Sauté Aromatics

In the same pot, add more oil if needed.

Add onion, garlic, carrots, and celery. Sauté for 5–6 minutes until softened and fragrant.
Step 3: Simmer the Stew

Return the chicken to the pot.

Add potatoes, chicken broth, thyme, parsley, bay leaf, and paprika.

Bring to a boil, then reduce heat to low. Cover and simmer for 25–30 minutes, or until vegetables and chicken are tender.
Step 4: Thicken the Stew

In a small bowl, mix flour and water to make a slurry.

Stir it into the stew and simmer uncovered for 5–10 minutes until thickened.

Add frozen peas (and corn, if using) and cook for another 5 minutes.
Step 5: Serve

Remove bay leaf before serving.
