  • ¼ cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch

Step 1: Prepare the Crust

Place the semi-sweet chocolate in a microwave-safe bowl.

Heat in 20-second intervals at medium power, stirring after each interval until completely melted and smooth. Allow the chocolate to cool slightly before adding it to the batter.

Warm chocolate blends more smoothly into the cheesecake mixture, but it should not be hot enough to cook the eggs.

Step 3: Prepare the Cheesecake Filling

In a large bowl, beat the softened cream cheese until completely smooth and creamy.

Add the sugar and continue mixing until incorporated.

Mix in the sour cream, heavy cream, vanilla extract, cocoa powder, flour, and salt.

Add the melted chocolate and mix until the batter becomes rich and silky.

Finally, add the eggs one at a time, mixing on low speed after each addition. Avoid overmixing because incorporating too much air can cause cracks during baking.

The finished batter should be thick, smooth, and glossy.

Step 4: Assemble the Cheesecake

Pour the cheesecake batter onto the cooled crust.

Use a spatula to spread the filling evenly.

Gently tap the pan on the counter several times to release trapped air bubbles.

Wrap the outside of the springform pan with aluminum foil if you plan to use a water bath.

Step 5: Bake the Cheesecake

Place the cheesecake in the oven and bake at 325°F (163°C) for 65 to 70 minutes.

The edges should appear set while the center still has a slight jiggle when gently shaken.

Turn off the oven and crack the oven door open slightly. Let the cheesecake cool inside the oven for 1 hour. This gradual cooling process helps prevent cracking.

Remove the cheesecake from the oven and allow it to cool completely at room temperature.

Once cooled, refrigerate for at least 6 hours or overnight for the best texture.

Step 6: Make the Strawberry Topping

In a saucepan, combine sliced strawberries, sugar, and lemon juice.

Cook over medium heat for about 5 minutes, stirring occasionally.

Mix the cornstarch with water to create a slurry.

Add the slurry to the strawberries and continue cooking for another 2 to 3 minutes until the mixture thickens.

Remove from heat and allow the topping to cool completely.

Once cooled, spoon the strawberry mixture over the chilled cheesecake.

Step 7: Decorate and Serve

Remove the cheesecake from the springform pan.

Transfer it carefully to a serving plate.

Top with fresh strawberries, chocolate shavings, whipped cream, or a drizzle of melted chocolate if desired.

Slice using a sharp knife dipped in hot water and wiped clean between cuts for neat, bakery-style slices.

Do not overbeat the eggs because excess air can lead to cracks.

Fresh strawberries provide the brightest flavor, but frozen strawberries can also work for the topping.
