Cottage Cheese Cookie

Ingredients:

  • 1 cup cottage cheese
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions:

Preheat the Oven:

  2. Line baking sheets with parchment paper.

 Blend Cottage Cheese:

  1. In a blender or food processor, blend the cottage cheese until smooth.

 Cream Butter and Sugar:

  1. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

 Add Eggs and Vanilla:

Combine Dry Ingredients:

  1. Drop rounded tablespoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  2. Bake in the preheated oven for 12-15 minutes or until the edges are lightly golden.

 Cool and Dust:

  1. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  2. Optionally, dust the cooled cookies with powdered sugar for a decorative touch.
