Beef and Broccoli Stir Fry

Ingredients:

For the Marinade:

  • 1 lb flank steak, thinly sliced against the grain
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon rice wine or dry sherry
  • 1 tablespoon cornstarch
  • 1 teaspoon sesame oil
  • 1 teaspoon sugar

For the Stir Fry:

  • 3 cups broccoli florets
  • 2 tablespoons vegetable oil, divided
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1/2 cup low-sodium beef broth
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)
  • 2 green onions, sliced (for garnish)
  • Sesame seeds (optional, for garnish)
  • Cooked white rice (for serving)

Instructions:

Marinate the Beef:

  1. In a bowl, combine the sliced flank steak with soy sauce, oyster sauce, rice wine, cornstarch, sesame oil, and sugar. Mix well and let it marinate for at least 15 minutes.

Blanch the Broccoli:

  1. Bring a pot of water to a boil.
  2. Add the broccoli florets and blanch for 2 minutes until they are bright green but still crisp.
  3. Drain and rinse the broccoli under cold water to stop the cooking process.

Stir Fry:

  1. Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat.
  2. Add the marinated beef slices and stir-fry for 2-3 minutes until browned and cooked through.
  3. Remove the beef from the wok and set aside.

Cook the Broccoli:

  1. In the same wok, add the remaining 1 tablespoon of vegetable oil.
  2. Add minced garlic and grated ginger, stir-frying for 30 seconds until fragrant.
  3. Add the blanched broccoli to the wok and stir-fry for 2-3 minutes.

Combine and Sauce:

  1. Return the cooked beef to the wok with the broccoli.
  2. In a small bowl, mix beef broth, soy sauce, oyster sauce, and cornstarch-water mixture.
  3. Pour the sauce over the beef and broccoli, stirring continuously until the sauce thickens.

Garnish and Serve:

  1. Garnish the Beef and Broccoli Stir Fry with sliced green onions and sesame seeds if desired.
  2. Serve over cooked white rice.

Note: Adjust the thickness of the sauce by adding more or less cornstarch mixture.
