Crawfish King Cake

Ingredients

For the Dough:

  • 2 1/4 teaspoons (1 packet) active dry yeast
  • 1/4 cup warm water (110°F)
  • 1/2 cup milk
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 3 1/2 cups all-purpose flour

For the Filling:

  • 1 pound crawfish tails, peeled and deveined
  • 1 small onion, finely chopped
  • 1 small bell pepper, finely chopped
  • 2 celery stalks, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons unsalted butter
  • 1 tablespoon Cajun seasoning
  • 1/2 cup grated cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped green onions
  • Salt and pepper to taste

For the Topping:

  • 1/4 cup melted butter
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Prepare the Dough:
    • In a small bowl, dissolve the yeast in warm water and let it sit for 5 minutes until frothy.
    • In a large mixing bowl, combine the milk, sugar, melted butter, salt, vanilla extract, and eggs.
    • Add the yeast mixture and mix well.
    • Gradually add the flour, one cup at a time, mixing until a soft dough forms.
    • Turn the dough onto a floured surface and knead for about 10 minutes until smooth and elastic.
    • Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
  2. Prepare the Filling:
    • In a large skillet, melt the butter over medium heat.
    • Add the chopped onion, bell pepper, celery, and garlic. Sauté until the vegetables are soft, about 5 minutes.
    • Stir in the crawfish tails and Cajun seasoning. Cook for another 5 minutes until the crawfish are cooked through.
    • Remove from heat and stir in the grated cheddar cheese, Parmesan cheese, and chopped green onions. Season with salt and pepper to taste. Let it cool slightly.
  3. Assemble the King Cake:
    • Preheat your oven to 350°F (175°C).
    • Punch down the risen dough and turn it out onto a floured surface.
    • Roll the dough into a large rectangle, about 10×20 inches.
    • Spread the crawfish filling evenly over the dough, leaving a small border around the edges.
    • Starting with the long side, roll the dough up tightly into a log.
    • Shape the log into a ring and pinch the ends together to seal.
    • Place the ring on a greased baking sheet. Cover and let it rise for another 30 minutes.
  4. Bake the King Cake:
    • Brush the top of the king cake with the melted butter.
    • Bake in the preheated oven for 30-35 minutes, or until golden brown and cooked through.
    • Remove from the oven and brush with more melted butter. Sprinkle with grated Parmesan cheese and chopped parsley.
  5. Serve:
    • Allow the king cake to cool slightly before slicing and serving.
    • Serve warm and enjoy the delicious combination of savory crawfish filling and soft, buttery dough.
