Description:

Sourdough discard crackers are a great way to use up excess sourdough starter. These crispy, flavorful crackers are easy to make and perfect for snacking.

Ingredients:

  • 1 cup (240g) sourdough starter discard (unfed)
  • 1 cup (120g) all-purpose flour
  • 1/4 cup (60ml) olive oil
  • 1/2 teaspoon salt
  • 1 teaspoon dried herbs (such as rosemary, thyme, or oregano) or seasoning of choice
  • Optional: coarse salt for sprinkling

Instructions:

Prep Work (5 minutes):

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C).
    • Line a baking sheet with parchment paper.

Making the Dough (5 minutes):

  1. Mix the Ingredients:
    • In a large mixing bowl, combine the sourdough starter discard, all-purpose flour, olive oil, salt, and dried herbs or seasoning.
    • Mix until a dough forms. If the dough is too sticky, add a bit more flour; if it’s too dry, add a bit more olive oil.

Rolling and Cutting the Dough (10 minutes):

  1. Roll Out the Dough:
    • Place the dough on a piece of parchment paper or a lightly floured surface.
    • Roll it out as thinly as possible (about 1/8 inch thick) for crispier crackers.
  2. Cut the Crackers:
    • Using a pizza cutter or a sharp knife, cut the dough into desired shapes (squares, rectangles, or triangles).
    • Transfer the parchment paper with the cut dough onto the baking sheet.

Baking the Crackers (20-25 minutes):

  1. Bake:
    • Bake in the preheated oven for 20-25 minutes, or until the crackers are golden brown and crispy.
    • Check occasionally to prevent burning, especially around the edges.
    • If desired, sprinkle coarse salt over the top of the crackers halfway through baking.
  2. Cool:
    • Remove from the oven and allow to cool completely on the baking sheet. The crackers will continue to crisp up as they cool.

Serve:

  1. Store:
    • Store the cooled crackers in an airtight container at room temperature. They will stay fresh for up to a week.
  2. Enjoy:
    • Serve these crackers with cheese, dips, or as a crunchy snack on their own.
