 Ingredients

  • 2 cups all-purpose flour

  • 1 tbsp baking powder

  • 1/4 tsp salt

  • 3/4 to 1 cup water or milk (just enough to bring the dough together)

  • 2 tbsp vegetable oil or melted butter (optional, for tenderness)

  • Oil for frying (canola or vegetable oil; about 1/2–1 inch deep in pan)

 Instructions

 Step 1: Mix Dry Ingredients

  1. In a large bowl, whisk together:

    • 2 cups flour

    • 1 tbsp baking powder

    • 1/4 tsp salt

    • 2 tbsp sugar (if using)

  2. Stir in the raisins, coating them in the flour mixture to prevent clumping.

 Step 2: Add Liquid

  1. Gradually add water or milk and optional oil or melted butter.

  2. Stir until a soft, slightly sticky dough forms.

    Do not overmix — stir just until combined.

  3. Let rest for 5–10 minutes (optional, but helps texture).

 Step 3: Shape the Dough

  1. Lightly flour your hands and divide the dough into 6–8 balls.

  2. Flatten each into a disk about 1/2-inch thick.

    You can also roll the dough and cut into rounds or triangles.

 Step 4: Fry the Bannock

  1. Heat about 1/2 inch of oil in a heavy pan (cast iron preferred) over medium heat.

  2. Test with a pinch of dough — it should sizzle gently.

  3. Carefully place 2–3 pieces in the pan at a time (don’t overcrowd).

  4. Fry for 2–3 minutes per side, or until golden brown and puffed.

  5. Remove with tongs or a slotted spoon and drain on paper towels.

 Serving Ideas

Fried raisin bannock is best warm, and can be served with:

  • Butter and honey or maple syrup

  • Jam or preserves

  • Peanut butter or Nutella

  • A sprinkle of cinnamon-sugar for a donut-like twist

  • With tea or coffee as a cozy snack

  • Room temp: Store in a sealed container for 1–2 days

  • Fridge: Keeps up to 4 days

  • Reheat: In the oven or air fryer at 350°F (175°C) until warmed through
