Green Chicken Enchilada Soup

Ingredients:
- 1 pound boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon dried oregano
- 4 cups chicken broth
- 1 (10 oz) can green enchilada sauce
- 1 (4 oz) can diced green chilies
- 1 cup frozen corn kernels
- 1 can black beans, drained and rinsed
- Salt and pepper, to taste
- 1 cup shredded Monterey Jack cheese
- Optional toppings: chopped fresh cilantro, sliced green onions, sour cream, tortilla strips
Instructions:
- Heat olive oil in a large pot or Dutch oven over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
- Add minced garlic, ground cumin, chili powder, and dried oregano to the pot. Stir and cook for another 1-2 minutes until fragrant.
- Push the onion and spice mixture to the side of the pot and add the boneless, skinless chicken breasts. Cook the chicken for about 5-6 minutes per side until browned and cooked through.
- Pour in the chicken broth, green enchilada sauce, diced green chilies, frozen corn kernels, and drained black beans. Stir well to combine all the ingredients.
- Bring the soup to a simmer. Cover the pot and let it simmer for about 15-20 minutes, allowing the flavors to meld together and the chicken to become tender.
- Once the chicken is cooked through and tender, use tongs to remove it from the pot. Shred the chicken using two forks and return it to the soup.
- Season the soup with salt and pepper to taste. Adjust the seasoning as needed.
- Sprinkle shredded Monterey Jack cheese into the soup, stirring until melted and well incorporated.
- Allow the soup to simmer for an additional 5 minutes to ensure everything is heated through and the cheese is melted completely.
- Serve the Green Chicken Enchilada Soup hot, garnished with chopped fresh cilantro, sliced green onions, a dollop of sour cream, and tortilla strips if desired.
