Griddle tortellini

Ingredients:
- 1 lb fresh or frozen tortellini
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- 1 bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1 cup spinach leaves
- Salt and pepper to taste
- Grated Parmesan cheese for serving (optional)
- Fresh basil leaves for garnish (optional)
Instructions:
- Preheat the Blackstone Griddle:
- Preheat your Blackstone griddle over medium heat.
- Cook the Tortellini:
- Bring a large pot of salted water to a boil. Cook the tortellini according to the package instructions until al dente. Drain and set aside.
- Prepare the Ingredients:
- While the tortellini is cooking, prepare the vegetables. Mince the garlic, chop the onion, dice the bell pepper, and halve the cherry tomatoes.
- Cook on the Griddle:
- Once the griddle is hot, add the olive oil and minced garlic. Cook for about 1 minute until fragrant.
- Add the chopped onion and diced bell pepper to the griddle. Cook, stirring occasionally, until the vegetables are softened and slightly caramelized, about 3-4 minutes.

- Add the spinach leaves to the griddle and cook until wilted, about 1-2 minutes.
- Season with salt and pepper to taste.

- Remove the griddle from the heat and transfer the tortellini and vegetable mixture to a serving platter.
- Serve hot, garnished with grated Parmesan cheese and fresh basil leaves if desired.
