Dave’s killer bread

Preparation Time: 3 hours (including rising and baking time)

Ingredients:

  • 2 cups whole wheat flour
  • 1 cup bread flour
  • 1/2 cup mixed seeds (such as pumpkin, sunflower, and sesame)
  • 1 1/2 teaspoons active dry yeast
  • 1 tablespoon honey
  • 1 1/4 cups warm water
  • 2 tablespoons olive oil
  • 1 teaspoon salt

Instructions:

  1. Activate Yeast: In a small bowl, dissolve the honey in warm water. Sprinkle the yeast over the water and let it sit for about 5-10 minutes until frothy.
  2. Mix Dry Ingredients: In a large mixing bowl, combine the whole wheat flour, bread flour, mixed seeds, and salt. Make a well in the center.
  3. Combine Ingredients: Pour the activated yeast mixture and olive oil into the well of the dry ingredients. Stir until a rough dough forms.
  4. Knead the Dough: Turn the dough out onto a lightly floured surface. Knead for about 8-10 minutes until the dough is smooth and elastic.
  5. First Rise: Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
  6. Shape the Loaf: Punch down the risen dough and shape it into a loaf. Place it in a greased loaf pan, cover, and let it rise again for about 30-45 minutes.
  7. Preheat Oven: Preheat your oven to 375°F (190°C) during the last 15 minutes of the second rise.
  8. Bake: Once the dough has risen again, bake the bread in the preheated oven for 30-35 minutes or until golden brown and sounds hollow when tapped on the bottom.
