Skill Level: Easy

Servings: 2 sandwiches
Ingredients
For the Sandwich:
-
4 slices of bread (sourdough, white, or brioche work great)
-
2 tablespoons unsalted butter (softened)
-
4 slices of cheddar or American cheese (or cheese of choice)
For the Scrambled Eggs:
-
4 large eggs
-
2 tablespoons milk or cream
-
Salt and pepper, to taste
-
1 tablespoon butter or oil
For the Sausage:
-
4 breakfast sausage links or ½ lb ground breakfast sausage
-
Optional: pinch of red pepper flakes or herbs (sage, thyme) for extra flavor
Instructions
Step 1: Cook the Sausage
-
If using links, heat a skillet over medium heat and cook sausage until browned and cooked through, about 8–10 minutes, turning occasionally.
-
If using ground sausage, break it up in the skillet with a spatula and cook until browned, about 5–6 minutes.
-
Transfer cooked sausage to a plate lined with paper towels to drain excess grease.
Step 2: Scramble the Eggs
-
Crack the eggs into a bowl. Add milk or cream, a pinch of salt, and pepper. Beat well with a fork or whisk until fully combined.
-
Heat 1 tablespoon of butter or oil in a nonstick skillet over medium-low heat.
-
Pour in the egg mixture. Let it sit for a few seconds, then gently stir with a spatula, pushing from the edges toward the center.
-
Continue cooking, stirring occasionally, until eggs are just set but still soft and slightly creamy. Remove from heat immediately.
Step 3: Assemble the Sandwiches
-
Butter one side of each slice of bread.
-
On the unbuttered side, layer in this order:
-
1 slice of cheese
-
Half the scrambled eggs
-
Half the sausage
-
Another slice of cheese
-
-
Top with the second slice of bread, buttered side facing out.
Repeat for the second sandwich.
Step 4: Grill the Sandwiches
-
Heat a skillet or griddle over medium heat.
-
Place the sandwiches in the pan. Cook for 3–4 minutes per side, or until the bread is golden brown and the cheese is melted.
-
Press slightly with a spatula to ensure even grilling and full contact with the pan.
-
If the bread is browning too quickly before the cheese melts, lower the heat.
Step 5: Serve
Remove sandwiches from the pan, let cool for 1 minute, then slice in half. Serve hot with your favorite sides—hash browns, fruit, or a cup of coffee.
