Grilled Cheese with Scrambled Eggs & Sausage

 Ingredients

For the Sandwich:

  • 4 slices of bread (sourdough, white, or brioche work great)

  • 2 tablespoons unsalted butter (softened)

  • 4 slices of cheddar or American cheese (or cheese of choice)

For the Scrambled Eggs:

  • 4 large eggs

  • 2 tablespoons milk or cream

  • Salt and pepper, to taste

  • 1 tablespoon butter or oil

For the Sausage:

  • 4 breakfast sausage links or ½ lb ground breakfast sausage

  • Optional: pinch of red pepper flakes or herbs (sage, thyme) for extra flavor

 Instructions

Step 1: Cook the Sausage

  • If using links, heat a skillet over medium heat and cook sausage until browned and cooked through, about 8–10 minutes, turning occasionally.

  • If using ground sausage, break it up in the skillet with a spatula and cook until browned, about 5–6 minutes.

  • Transfer cooked sausage to a plate lined with paper towels to drain excess grease.

Step 2: Scramble the Eggs

  1. Crack the eggs into a bowl. Add milk or cream, a pinch of salt, and pepper. Beat well with a fork or whisk until fully combined.

  2. Heat 1 tablespoon of butter or oil in a nonstick skillet over medium-low heat.

  3. Pour in the egg mixture. Let it sit for a few seconds, then gently stir with a spatula, pushing from the edges toward the center.

  4. Continue cooking, stirring occasionally, until eggs are just set but still soft and slightly creamy. Remove from heat immediately.

Step 3: Assemble the Sandwiches

  1. Butter one side of each slice of bread.

  2. On the unbuttered side, layer in this order:

    • 1 slice of cheese

    • Half the scrambled eggs

    • Half the sausage

    • Another slice of cheese

  3. Top with the second slice of bread, buttered side facing out.

Repeat for the second sandwich.

Step 4: Grill the Sandwiches

  1. Heat a skillet or griddle over medium heat.

  2. Place the sandwiches in the pan. Cook for 3–4 minutes per side, or until the bread is golden brown and the cheese is melted.

  3. Press slightly with a spatula to ensure even grilling and full contact with the pan.

  4. If the bread is browning too quickly before the cheese melts, lower the heat.

Step 5: Serve

Remove sandwiches from the pan, let cool for 1 minute, then slice in half. Serve hot with your favorite sides—hash browns, fruit, or a cup of coffee.

  • With Hot Sauce: Add a few dashes of hot sauce or sriracha to your eggs for a spicy kick.

  • Make it Deluxe: Add sautéed onions, bell peppers, or even avocado slices for more layers of flavor.
