Homemade Italian Struffol

Ingredients

For the Dough:

  • 2 cups (250g) all-purpose flour

  • 2 tablespoons unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest (optional, for extra flavor)

  • 2-3 cups vegetable oil (such as sunflower or canola oil)

For the Honey Coating:

  • 1 cup (340g) honey
  • 1/4 cup (50g) granulated sugar
  • 1 tablespoon orange juice (optional, for a citrusy twist)

For Decoration:

  • Rainbow sprinkles
  • Chopped candied fruit (optional)
  • Chopped nuts (almonds, hazelnuts, or pistachios)

Instructions

Step 1: Prepare the Dough

  1. In a large mixing bowl, combine the flour, sugar, salt, and baking powder. Mix well to distribute the dry ingredients evenly.
  2. Create a well in the center of the dry ingredients and add the eggs, softened butter, vanilla extract, and lemon zest.
  3. Using a fork, gently beat the wet ingredients together in the well, gradually incorporating the dry ingredients to form a dough.
  4. Once the dough begins to come together, transfer it to a lightly floured surface and knead for about 5-7 minutes until smooth and elastic.
  5. Wrap the dough in plastic wrap and let it rest at room temperature for 20 minutes. This allows the gluten to relax, making the dough easier to work with.

Step 2: Shape the Struffoli

  1. After the dough has rested, divide it into four equal portions.
  2. Roll each portion into a thin rope, approximately 1/2 inch in diameter.
  3. Using a sharp knife or bench scraper, cut the ropes into small pieces, about the size of a marble (1/2 inch).
  4. Roll the pieces gently between your palms to form smooth balls. Keep the dough balls lightly floured to prevent sticking.

Step 3: Fry the Dough Balls

  1. In a deep saucepan or fryer, heat the vegetable oil to 350°F (175°C). Use a kitchen thermometer for accuracy.
  2. Carefully add a small batch of dough balls to the hot oil, ensuring not to overcrowd the pan. Fry for 2-3 minutes, stirring occasionally, until golden brown and puffed.
  3. Using a slotted spoon, transfer the fried dough balls to a plate lined with paper towels to drain excess oil.
  4. Repeat with the remaining dough balls, allowing the oil to return to the correct temperature between batches.

Step 4: Prepare the Honey Coating

  1. In a large skillet or saucepan, combine the honey, sugar, and orange juice (if using).
  2. Heat over medium-low heat, stirring occasionally, until the sugar dissolves and the mixture becomes smooth and syrupy. This takes about 3-5 minutes.
  3. Remove the skillet from heat.

Step 5: Assemble the Struffoli

  1. Add the fried dough balls to the skillet with the honey syrup. Toss gently to coat each ball evenly.
  2. Arrange the honey-coated Struffoli on a serving platter. You can shape them into a mound or a wreath for a festive presentation.
  3. Sprinkle the Struffoli with rainbow sprinkles, candied fruit, and chopped nuts while the honey is still warm, so the decorations adhere.
  4. Let the assembled Struffoli cool for at least 30 minutes before serving.

Serving Suggestions

Struffoli is best enjoyed fresh, but it can be stored in an airtight container at room temperature for up to 3 days. Serve as a centerpiece dessert for holiday gatherings, paired with coffee or a dessert wine
