Instructions

Step 1: Prepare the Oven

Preheat your oven to 350°F (175°C).

Grease an 8-inch round cake pan and line the bottom with parchment paper for easy removal.


Step 2: Slice the Apples

Wash, peel, and core the apples.

Using a mandoline or sharp knife, slice them as thinly as possible—about 1–2 mm thick. Thin slices are essential because they soften beautifully while baking and create the cake’s signature layered appearance.

Place the sliced apples into a large mixing bowl.


Step 3: Make the Batter

In another bowl, whisk together:

  • Eggs
  • Granulated sugar

Continue whisking for about 2–3 minutes until the mixture becomes light and slightly frothy.

Add:

  • Vanilla extract
  • Almond extract (if using)
  • Melted butter
  • Milk

Whisk until smooth.


Step 4: Add the Dry Ingredients

In a separate bowl combine:

  • Flour
  • Baking powder
  • Salt
  • Cinnamon
  • Nutmeg

Gradually fold the dry ingredients into the wet ingredients until a smooth batter forms.

Do not overmix.


Step 5: Coat the Apples

Pour the batter over the sliced apples.

Using a rubber spatula, gently fold everything together until every apple slice is lightly coated.

The batter should seem sparse—that is completely normal. The apples are the main ingredient.


Step 6: Assemble

Transfer the apple mixture into the prepared cake pan.

Arrange the slices as evenly as possible.

Press down lightly with the spatula to remove air pockets.

Smooth the top.


Step 7: Bake

Bake for 45–50 minutes, or until:

  • The top is golden brown.
  • A toothpick inserted into the center comes out mostly clean.
  • The cake feels set.

If the top browns too quickly, loosely cover with aluminum foil during the final 10 minutes.


Step 8: Cool

Allow the cake to cool inside the pan for 15 minutes.

Carefully remove from the pan and transfer to a cooling rack.

Cool completely before slicing for the cleanest layers.

Dust with powdered sugar before serving.
