 Preparation Steps

Step 1: Prepare the Dough (If Making Fresh)

  1. In a small bowl, combine warm water, sugar, and yeast. Let sit for 5–10 minutes until frothy.

  2. In a large mixing bowl, combine flour and salt. Pour in the yeast mixture and olive oil.

  3. Knead for 8–10 minutes by hand or using a stand mixer until smooth and elastic.

  4. Cover with a damp cloth and let it rise for 1 hour in a warm place until doubled in size.

Step 2: Make the Meat Filling

  1. Heat olive oil in a skillet over medium heat. Add chopped onions and cook until translucent (about 5 minutes).

  2. Add garlic and cook for another minute until fragrant.

  3. Add ground beef and sausage to the skillet, breaking it up with a spatula. Cook until browned, about 8–10 minutes.

  4. Drain excess fat and remove the meat mixture to a bowl.

  5. Once slightly cooled, mix in the egg, breadcrumbs, Parmesan, parsley, oregano, salt, and pepper. Set aside to cool.

Step 3: Make the Tomato Sauce

  1. In a small saucepan, heat olive oil over medium heat.

  2. Add crushed tomatoes, tomato paste, sugar, garlic powder, and basil.

  3. Simmer for 15–20 minutes, stirring occasionally. Adjust seasoning with salt and pepper.

Step 4: Assemble the Meat-Rolls

  1. Preheat the oven to 375°F (190°C).

  2. If using homemade dough, punch it down and roll out into a large rectangle about 1/4 inch thick. Cut into 6–8 smaller rectangles.

  3. Place 2–3 tablespoons of the meat filling on one end of each rectangle.

  4. Roll the dough tightly around the meat, tucking the sides in to seal the ends.

  5. Place the rolls seam-side down on a parchment-lined baking sheet.

Step 5: Bake and Finish

  1. Spoon a small amount of tomato sauce over each roll.

  2. Sprinkle shredded mozzarella on top.

  3. Bake for 25–30 minutes until golden and bubbly.

  4. For extra crispiness, broil for 1–2 minutes at the end.

  5. Garnish with fresh basil and more grated Parmesan before serving.
