 Ingredients

Here’s everything you’ll need to create authentic Italian Meat-Rolls:

For the Meat Filling:

  • 500g (1.1 lbs) ground beef (preferably 80% lean)

  • 100g (3.5 oz) Italian sausage, removed from casing

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 2 tablespoons olive oil

  • 1 egg, beaten

  • 1/4 cup grated Parmigiano-Reggiano

  • 1/2 cup fresh breadcrumbs (or panko)

  • 1 tablespoon fresh parsley, chopped

  • 1 teaspoon dried oregano

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

For the Dough (Optional – or use store-bought crescent dough):

  • 3 cups all-purpose flour

  • 1 packet (2¼ tsp) active dry yeast

  • 1 cup warm water (110°F/45°C)

  • 2 tablespoons olive oil

  • 1 teaspoon sugar

  • 1 teaspoon salt

For the Tomato Sauce:

  • 1 can (400g/14 oz) crushed tomatoes

  • 2 tablespoons tomato paste

  • 1 tablespoon olive oil

  • 1/2 teaspoon sugar

  • 1 teaspoon dried basil

  • 1/2 teaspoon garlic powder

  • Salt and pepper to taste

For Garnish and Topping:

  • 1/4 cup shredded mozzarella cheese

  • Fresh basil leaves

  • Additional grated Parmesan

 Preparation Steps

Step 1: Prepare the Dough (If Making Fresh)

  1. In a small bowl, combine warm water, sugar, and yeast. Let sit for 5–10 minutes until frothy.

  2. In a large mixing bowl, combine flour and salt. Pour in the yeast mixture and olive oil.

  3. Knead for 8–10 minutes by hand or using a stand mixer until smooth and elastic.

  4. Cover with a damp cloth and let it rise for 1 hour in a warm place until doubled in size.

Step 2: Make the Meat Filling

  1. Heat olive oil in a skillet over medium heat. Add chopped onions and cook until translucent (about 5 minutes).

  2. Add garlic and cook for another minute until fragrant.

  3. Add ground beef and sausage to the skillet, breaking it up with a spatula. Cook until browned, about 8–10 minutes.

  4. Drain excess fat and remove the meat mixture to a bowl.

  5. Once slightly cooled, mix in the egg, breadcrumbs, Parmesan, parsley, oregano, salt, and pepper. Set aside to cool.

Step 3: Make the Tomato Sauce

  1. In a small saucepan, heat olive oil over medium heat.

  2. Add crushed tomatoes, tomato paste, sugar, garlic powder, and basil.

  3. Simmer for 15–20 minutes, stirring occasionally. Adjust seasoning with salt and pepper.

Step 4: Assemble the Meat-Rolls

  1. Preheat the oven to 375°F (190°C).

  2. If using homemade dough, punch it down and roll out into a large rectangle about 1/4 inch thick. Cut into 6–8 smaller rectangles.

  3. Place 2–3 tablespoons of the meat filling on one end of each rectangle.

  4. Roll the dough tightly around the meat, tucking the sides in to seal the ends.

  5. Place the rolls seam-side down on a parchment-lined baking sheet.

Step 5: Bake and Finish

  1. Spoon a small amount of tomato sauce over each roll.

  2. Sprinkle shredded mozzarella on top.

  3. Bake for 25–30 minutes until golden and bubbly.

  4. For extra crispiness, broil for 1–2 minutes at the end.

  5. Garnish with fresh basil and more grated Parmesan before serving.

 Serving Suggestions

Serve these rolls hot from the oven with:

  • A side salad (such as arugula with lemon vinaigrette)

  • Garlic bread

  • A glass of red wine (Chianti or Sangiovese complements beautifully)

For a more casual occasion, slice them in half and serve as hearty appetizers or game-day finger food.

 Tips & Variations

  • Make-Ahead: You can assemble the meat-rolls a day in advance and refrigerate them. Just bake right before serving.

  • Spicy Kick: Add red pepper flakes to the meat filling or sauce for extra heat.

  • Vegetarian Version: Replace meat with sautéed mushrooms, spinach, and ricotta.

  • Low-Carb: Skip the dough and wrap the meat mixture in eggplant or zucchini slices.

 Intensity and Effort

Effort Level: Moderate
This recipe involves a few stages—dough making, meat prep, sauce, and assembly—which may take some coordination, especially for beginners. However, none of the steps are particularly difficult.

Time Management Tip:
Make the sauce and filling a day ahead, or use store-bought sauce and dough to cut time in half.
